Bad Again!

Here are FINALLY {that I remembered} the photos and recipe for the yummy peach cobbler Hubs and I made awhile ago now.

Oh man was it YUMMY!

Ingredients

    Peach Mixture:
    3Tbsp Smart Balance Spread
    1/2 cup (100g) Splenda
    2 Tbsp cornstarch
    1 tsp ground cinnamon
    2 tsp vanilla extract
    1/2 tsp lemon juice
    4 cups fresh peaches
    1 1/2 cup water
    Topping:
    1 cup bisquick
    1 cup old fashion oats
    3 Tbsp splenda
    1/4 tsp ground cinnamon
    1/2 cup skim milk
    1 Tbsp melted Smart Balance spread


Directions

1. Heat oven to 400 degreesF. In 4-quart saucepan, heat 3 Tbsp margarine, 1/2 cup sugar and the cornstarch over medium heat 1 minute, stirring constantly, until margarine is melted. Stir in 2 teaspoons cinnamon, the vanila, lemon juice and peaches with 1 1/2 cup water. Heat to boiling; boil 1 minute, stirring occasionally. Pour into a ungreased 13 x 9-inch glass baking dish.

2. In a medium bowl, stir Bisquick mix, 2 Tbsp of sugar, 1/4 tsp cinnamon, the milk and 1 Tbsp melted margarine until soft dough forms. Drop dough by heaping tablespoonfuls over hot peach mixture. Sprinkle with remaining sugar.

3. Bake 20 to 25 minutes or until peach mixture is bubbly around edges and topping is golden brown. Serve warm.

Serve 12 (1 - cup servings)
